The fact that the fans are always on could be caused by a missing ECT value. A tstat failure forced the car to go into a recovery mode where the fans stay on at full blast and the temp gauge pegs to zero. I don’t know why gm made it such that it overrides the temp gauge but the tstat is likely your problem. Very common c7 failure. it is indeed dumb that the temp gauge gets blanked out essentially.Seems to me that the most reasonable explanation for this would be that the sensor is bad. This would certainly solve the temp gauge and engine temp. I don't believe (not 100% sure) this issue would affect the operation of the AC (it would with the heat).
